4 Monos Viticultores

Spain

4 Monos Viticultores is a collective founded in 2010 by four friends—Javier García, Laura Robles, David Velasco, and David Moreno—who jointly own and run the project in the Sierra de Gredos, near Madrid. Working with old bush vines on granitic soils with shallow sandy topsoil, they farm certified organically and focus on careful, hands-on viticulture. In the cellar, Javier García and Laura Robles lead a minimal-intervention approach built around hand-harvested fruit, wild-yeast and whole-cluster fermentations, foot-trodding, low sulfur, and restrained oak use. The result is a small, artisanal winery defined by collective ownership, organic farming, and natural-minded winemaking.
