France

Les Hauts de Milly is an export-focused label produced by Domaine Bernard Defaix, drawing on the family-owned estate of Didier Defaix and Hélène Jaeger-Defaix in Burgundy’s Chablis and Rully areas. Its vineyards include 30-year-old vines on Kimmeridgian limestone soils, farmed using biodynamic methods. The estate was Ecocert organically certified from 2009, lost certification after the difficult 2016 harvest, and is working to regain it. The wine is harvested mechanically, fermented in stainless steel with indigenous yeasts, undergoes natural malolactic fermentation, and ages for ten months on fine lees without added sulfur.
