Simon Bize & Fils is a fourth-generation family domaine based in Savigny-lès-Beaune, with additional parcels in Aloxe-Corton, Corton-Charlemagne and Latricières-Chambertin. Founded in the late 19th century, it is now run by Chisa Bize, Marielle Grivot-Bize and Hugo Bize following the death of Patrick Bize in 2013, with Chisa leading the winemaking. The estate emphasizes careful vine work and harmony with nature, having introduced biodynamic farming in 2008 and holding biodynamic certification. In the cellar, the style is defined by balance, precision and delicacy, with whole-cluster or partial whole-cluster fermentations, natural fermentations, limited new oak, and red wines bottled without fining or filtration.
