Díaz Bayo is a family-owned estate in Ribera del Duero, Castilla y León, with the Díaz Bayo and Montaña families involved in its ownership. Its vineyards, planted on limestone, marl and clay soils at high elevation, range from 12 to 100 years old. The vines are farmed according to organic principles and dry-farmed, with mechanical weeding without chemicals, composted winery waste used as fertilizer, multiple thinning passes and hand-harvesting. Winemaker Isaac Fernández Montaña crafts the wines, reflecting a hands-on, sustainably managed approach rooted in the estate’s family ownership.
