Vinification & maturation
France
Founded in 2021 by friends Quentin Paillard, Flavien Nowack, Adrien Renoir, Bertrand Lapie, and Antoine Bouvet, Cidrerie de Verzy is a collaborative project based in Verzy, Champagne. The group approaches cider and poiré with a vigneron’s mindset, applying winemaking principles to organic and biodynamic apples and pears sourced from 30- to 250-year-old trees in Champagne and Normandy. Fermentation takes place in oak for up to a year, followed by natural bottle fermentation and at least 12 months on lees. The resulting ciders are precise, dry expressions shaped by old orchards and extended cellar ageing.
