Cave d’Azé is a farmer-owned cooperative founded in 1927 in Azé, in Burgundy’s Mâconnais. Its member winegrowers cultivate vineyards on clay-limestone soils, following seasonal vineyard work and increasingly sustainable practices including bioprotection, grass cover and a shift toward organic farming; the cooperative holds High Environmental Value and ISO 22000 certifications. Led in winemaking by Lorraine Tisserand, it produces white, red, rosé and sparkling wines from Chardonnay, Aligoté, Gamay and Pinot Noir, including Mâcon-Azé, Mâcon-Villages, Bourgogne and Crémant de Bourgogne. Traditional-method Crémants include Blanc de Blancs, Blanc de Noirs and rosé styles, while the Jules Richard cuvée commemorates founder Jules Richard.
