Parés Baltà is a historic, family-owned estate in Catalonia's Penedès region, founded in 1790 and now run by the third-generation Cusiné brothers. Spanning about 176 hectares across five distinct vineyard sites, the winery is fully integrated, controlling the entire process from vine to bottle and holding the DO Cava 'Elaborador Integral' seal. Since 2002, it has been certified organic, and since 2012, Demeter-certified biodynamic, employing practices like sheep grazing, beehives, and biodiversity preservation. Winemaking is led by the founders' spouses, oenologists María Elena Jiménez and Marta Casas, who focus on minimal intervention, crafting vegan, sulfite-free, and traditional-method sparkling and still wines that express their unique terroirs.
