Château Paillas is a Cahors producer based in Floressas, working on argilo-calcaire causse soils formed from Kimmeridgian limestone with Sidérolithique deposits. Its wines are made through traditional red vinification, with around 15 days of cuvaison followed by three years’ ageing in stainless steel. The estate avoids fining, uses only light filtration before bottling, and keeps total sulphur low. The 2010 vintage was noted for its dense, concentrated character, shaped by a cool winter, humid spring, sunny but moderate summer, and a fine late season influenced by the Autan wind.
