Weingut am Stein is a family-run VDP estate in Würzburg, Franconia, led by Ludwig and Sandra Knoll, with the next generation increasingly involved. The winery farms its own vineyards organically and biodynamically, certified by EU organic standards and Respekt; biodynamic practices have been followed since 2007 without synthetic pesticides, herbicides, or fertilizers. Key sites include Würzburger Stein, Würzburger Innere Leiste, and the steep Stettener Stein, planted on shell limestone soils. Silvaner and Riesling are specialties, with wines made in a purist, terroir-focused style through spontaneous fermentation and patient lees ageing. Concrete eggs, amphorae, wood, and stainless steel are selected according to each wine’s needs. The estate also produces traditional-method sparkling wines and Pet-Nats, and welcomes visitors for tastings and cellar tours.
