La Ferme de Sato is a husband-and-wife estate owned and operated by Yoshiaki and Kyoko Sato in Central Otago’s Lowburn district, on the upper slopes of the Pisa Ranges. Their vineyard was planted in 2016, with the winery completed in 2019. Certified organic and biodynamic under BioGro, the estate avoids synthetic chemicals and uses hand harvesting. Yoshiaki leads the winemaking, with Kyoko assisting, following a low-intervention approach based on natural yeast fermentation, modest sulfite additions, and no fining or filtration. The vineyard is planted to Chardonnay, Pinot Noir, Gamay, Chenin Blanc, and Cabernet Franc.
