Domaine La Calmette

France

Domaine La Calmette is a young Cahors estate founded and run by Maya Sallée and Nicolas Fernandez in Trespoux-Rassiels, on the limestone plateau overlooking Cahors. The domaine practices certified organic and biodynamic viticulture alongside regenerative methods, including minimal soil disturbance, plant cover, natural mulches, and the promotion of living soils. Vineyard work is carried out carefully and manually, with attention to the surrounding landscape and biodiversity. Their wines are intended to be living, precise, artisanal expressions of the terroir, made with minimal intervention, ambient yeasts, and low to no sulfur. Vinification takes place in stainless steel, concrete, and neutral French oak, including fruit from a single-vineyard parcel of mature vines.
