Clos Saint Sebastien is a domaine in Banyuls-sur-Mer on the Côte Vermeille, producing wines under the Collioure, Banyuls and Banyuls Grand Cru appellations. Its historic, sea-facing schist terraces—some reaching 400 metres—are worked manually, with traditional gobelet pruning, high-density planting, organic inputs and careful maintenance of dry-stone walls. Old Grenache Noir vines are complemented by Mourvèdre, Syrah, Grenache Gris, Grenache Blanc and Vermentino. Harvesting is manual, with parcels selected according to variety, vine age, altitude and exposure. Led by Jacques Piriou and agronomist-oenologist Romuald Peronne, the domaine combines inherited traditions with current agronomic and oenological knowledge. Its wines range from Collioure whites, rosés and reds to long-aged Banyuls Grand Cru, including a cuvée matured for 25 years in oak.
