La Bufarrella

Celler La Salada is a personal project in Penedès founded by Toni Carbó in 2012 and run together with Anna Serra. Centered on the single vineyard La Serra, planted in 2008, the estate released its first vintage in 2018. Farming is organic and biodynamic, with hand-harvested grapes, and the wines are made with native-yeast fermentations. In keeping with a low-intervention approach, they are bottled unfined, unfiltered, and vegan-friendly. Notes also mention limestone soils, older vines, and certified organic farming with inter-cropping grains between rows for nitrogen balance.
