Founded in 1933 by 12 farmers, Cantina San Donaci is a long-established cooperative in Salice Salentino, now bringing together around 300 members. Its vineyards lie on varied calcareous-clay terraces and Terra Rossa soils, with a strong commitment to preserving Puglia’s traditional Alberello bush-vine system alongside trellised vines. The cooperative emphasizes sustainable vineyard management, agronomic guidance, and rewarding members for grape quality, while its modern winery uses temperature control, soft presses, and submerged-cap fermenters. Family-run Cantine Paolo Leo owns the operation, with winemaking led by Nicola Leo and historical consultancy from Severino Garofano. Its wines express the Salento landscape through varieties including Negroamaro and Susumaniello.
