Toques et Clochers is organized and produced by Les Vignerons de Sieur d’Arques, a cooperative winery in Limoux, Languedoc-Roussillon. Its wines draw on four Limoux terroirs—Mediterranean, Autan, Oceanic, and Haute Valley—and a diverse range of vineyard plots, including terraced sites with clay-limestone and gravelly soils. Grapes are hand-harvested. Viviane Gianesini oversees the sparkling wines, while Simon Bouvet is responsible for the still wines, with Séverine Fournier as Production Manager. Since 1991, the annual Toques et Clochers festival and auction has supported bell-tower renovation, giving the project a distinctive community and cultural role.
