Laura Aillaud

France

Founded and owned by former sommelier Laura Aillaud in 2017, this independent estate is based in La Tour-d’Aigues in the Luberon. Aillaud farms organically using biodynamic-inspired methods, including permanent grass cover, minimal soil disturbance, and horse-drawn vineyard work. She is the sole winemaker, producing both Luberon AOC and Vin de France wines. In the cellar, fermentations rely on indigenous yeasts, with no additives and very low or no added sulfites. The domaine’s limited bottlings reflect a hands-on, small-scale approach focused on natural expression and careful stewardship of the vineyards.
