Domaine Savary is a family-owned estate based in Maligny, in the heart of Chablis, founded in 1984 by Olivier and Francine Savary and now joined by the next generation, Maxime and Mathieu. The domaine farms vineyards across Petit Chablis, Chablis, Premier Cru, Grand Cru and Bourgogne Épineuil. Its viticulture is sustainability-focused, with Terra Vitis and HVE certification, reasoned farming, full ploughing, grass cover and manual leaf thinning. In the cellar, Olivier Savary leads a careful, low-intervention approach, including natural yeast fermentation and ageing on fine lees. The wines are described as balanced, pure and elegant, with a strong emphasis on freshness, minerality and terroir expression.
