Ilatium Morini is a family-run estate in Veneto’s Valpolicella and Soave regions, owned and operated by seven Morini brothers and cousins. The family took over the historic farm in 1992 and moved to estate wine production in 2004. Their Soave, Valpolicella and Amarone are made from hand-harvested grapes, including fruit dried for 100–120 days using the appassimento method. Wines mature in French and American oak, with a style marked by lighter body, rich fruit, and notes of cocoa and tobacco.
