Carus Vini is a family-owned producer in the heart of Chianti Classico, between San Casciano and Mercatale in Val di Pesa. The Carissimo family, with farming roots in Campania and Puglia, acquired the property in 2011; the winery itself was created in the mid-1990s with Giacomo Tachis. Its vineyards, planted from the late 1970s to the 1990s on clay, alberese, galestro and river-pebble soils, produce Chianti Classico alongside Toscana IGT wines featuring varieties such as Syrah, Merlot and Cabernet Sauvignon. Organic certification has been maintained since the 2018 harvest, with hand harvesting, cover crops, weather-based treatments and reduced chemical inputs. Photovoltaic and solar-thermal systems further support the estate’s sustainability goals. Carus also explores innovation through underwater ageing, including its UWW Baldero Chianti Classico.
