Gallina de Piel Wines

Spain

Gallina De Piel is a Penedès-based #NoBodega project founded in 2017 by sommeliers David Seijas Vila, former head sommelier of El Bulli, and Guillem Sanz Obach. Rather than owning vineyards or a winery, they collaborate with selected growers and vineyard guardians across Catalonia, Aragon, Galicia and Tenerife, working with native varieties and expressing each territory through wines conceived as “liquid stories.” The project follows certified organic practices, including cover crops, yield regulation and double Guyot pruning, while its wines are vegetarian and vegan labelled. Seijas oversees low-intervention fermentations and extended lees ageing, with a focus on creativity, reinvention and honest communication rather than routine winemaking.
