Moderato is a French producer of alcohol-free wines based in the South-West, working with partner winegrowers from Bordeaux and Gascony. Its cuvées use expressive regional varieties including Colombard, Gros Manseng, Cabernet Franc, Cabernet Sauvignon, Merlot and Tannat, selected for balance, typicity, freshness and fruit. Wines are first made as traditional cuvées, with careful attention to selection and blending, before alcohol is gently removed through low-temperature vacuum distillation. Guided by oenologist Frédéric Brochet, Moderato aims to preserve wine’s essential character—aromatic complexity, acidity, tannins and freshness—while creating new alcohol-free styles. Founded by Fabien Marchand-Cassagne and Sébastien Thomas, the company carries out production from harvest to bottling in France.
