Élez is a certified Vino de Pago single-estate winery in El Bonillo, Albacete, set among high-altitude vineyards in the Sierra de Alcaraz at around 1,080 metres. Its organic certification dates from 2014, and the estate is a founding member of Grandes Pagos de España. Founded by actor-director Manuel Manzaneque and acquired by the Villoldo Ruiz family in 2020, it remains overseen in winemaking by Manzaneque. The estate works with its own grapes and winery, combining high-technology with artisanal methods. Manual harvesting, careful winery selection and élevage in foudres, tinos and small-format concrete tanks aim to express the Tierra de Sabinas terroir, producing fresh, distinctive wines, including limited-edition monovarietals from selected parcels.
