France

Fanny Sabre is a family-owned domaine in Pommard, Burgundy, run by winemaker-farmer Fanny Sabre, who inherited it in 2000 from a family estate founded in the 1980s. Working parcel by parcel across several top villages, she farms Pinot Noir and Chardonnay organically, using cover crops, hand labor and plowing only when needed. Her first solo vintage was released in 2006. In the cellar, Sabre follows a minimalist approach shaped under her own direction, with early guidance from Philippe Pacalet: native yeasts, no fining or filtration, low sulfur and limited new oak.
