Cascina Borgatta is a tiny, family-run estate in Tagliolo Monferrato, Piedmont, founded in 1949 and inherited by Maria Luisa Barizzone, who runs it with Emilio Oliveri. Their certified-organic vineyards focus on Dolcetto, with a small amount of Barbera, and are farmed manually through hand pruning, leaf-thinning, minimal soil disturbance and permanent grass cover to encourage biodiversity. Winemaking uses very little sulfur. Having reduced the estate to a manageable scale, the owners prioritize personal visitor interaction over mass sales, preserving a distinctly artisanal approach and very small production.
