Castel de Paolis is a family-run estate in Grottaferrata, Lazio, owned by the Santarelli family since Giulio Santarelli acquired the property in 1974 and formally established the winery in 1993. Its vineyards lie at around 270 metres in the volcanic, hyper-mineral soils of the Frascati area. Led by Fabrizio Santarelli, the estate focuses on terroir-driven planting and respect for the area’s distinctive character, while also researching ancient grape varieties.
