Weingut Hannes Sabathi

Austria

Hannes Sabathi is a family-owned estate in South Styria, operated by Hannes Sabathi, who took over the winery founded in 1860 in 2005 and serves as owner and head winemaker. The estate practices organic and sustainable viticulture without formal certification, with a focus on soil health, biodiversity, and responsible land stewardship. A member of the STK group since 2013, it emphasizes single-vineyard wines that express soil and vintage, using the Styrian origin system. Sauvignon Blanc and Chardonnay are central, alongside Muskateller, Weissburgunder, Grauburgunder, and Welschriesling. Wines from sites such as Ried Graf Woracziczky reflect the region’s dense limestone-marl Opok soils, bringing structure and acidity. The winery’s approach is grounded in patience, close attention to nature, and allowing wines time to develop.
