Wabi-Sabi Wine

Italy

Wabi-Sabi Wine is Franz Hofstätter’s low-intervention project, founded in 2016 and presented through both own-cellar and collaborative wines. Its black-label wines are made from hand-picked grapes selected by Hofstätter, mainly in the Wachau and along the Danube, while white-label wines are developed with partner growers, including Linden Vineyards, Johannes Zillinger and Christophe Hoch. The project follows organic-natural practices, using native yeasts, protective microorganisms, no copper and minimal sulfur, with total SO₂ limited to 50 mg/l. Wines are unfined and unfiltered, emphasizing lively acidity, freshness, roughness and individual character over polished smoothness. Own-cellar wines are matured in wooden barrels, while collaborative wines use stainless steel and large wood, with blending carried out alongside partners.
