Founded in 1996, Bodegas Olivares is a family-driven producer in Murcia’s high-elevation Hoya de Santa Ana vineyards. Its ungrafted old vines are farmed organically, without irrigation, and traditionally bush-pruned, with grapes harvested by hand. Winemaking is led by Pascual Olivares and Paco Selva, with a focus on low-intervention farming and traditional vineyard practices. Ownership is attributed to the Olivares family, while another source identifies Paco Selva as owner-winemaker.
