Cantina Todini is a family-run winery near Todi in Umbria, owned and operated by Luisa Todini, daughter of founder Franco Todini, and her partner Stefano Russo. Within its broader agricultural estate, the winery cultivates around 20 hectares of vineyards and produces DOC and IGT reds and whites, including a recent sulfite-free range. Farming is integrated and low-impact, with vineyard selection and harvesting carried out manually. Vineyards surround the cellar on hilly, predominantly south-facing sites, with clay soils containing volcanic pebbles, good ventilation and marked day-night temperature variation. Winemaking combines careful parcel selection, temperature-controlled fermentation in stainless steel, malolactic fermentation and French oak maturation, aiming for elegant, complex wines with a strong Umbrian identity.
