Poppy produces Pinot Noir from the Poppy Hillside vineyard in California’s Santa Lucia Highlands AVA, Monterey County. Planted on terraces overlooking the Salinas River Valley, the vineyard benefits from cool-climate conditions, coastal fog, and breezes that extend ripening. The wines are made with minimal processing, including a cold soak and moderate fermentation, then aged for at least one year in small French oak barrels.
